It's a Girl !

This is one of the older cakes but one ideal at any time. It is easy and fast to make; Simple and pretty looking to compliment the occasion. I used the ribbon which goes around the cake as an inspiration.

So you will need:

3 sponges, buttercream, jam, ready to roll icing, food coloring – pink and silver spray (optional).

3 x Bake sponges

200g of sugar

200g of self-rising flour

200g of butter

1 table spoon of baking soda

3 table spoon of water

1 tea spoon of vanilla essence

Food coloring (optional)

(Bake on small temperature – gas mark 4 for up to 40 min until golden brown, use a toothpick to check)

Buttercream

150g of butter

                                350g of icing sugar

1 tea spoon of vanilla essence

                                2-3 table spoon of milk

Royal icing for piping

                                1 egg white

                                200g of royal icing sugar

Put the cake together by placing sponges on top of each other filling them with buttercream and jam. Ensure the top of the cake is flat; cut the top sponge if needed. I cut my down but left the edges curved.

Color yours ready to roll icing to soft pink until very even, roll to size needed and cover your cake. Trim the bottom edges. Use the ribbon to circle the cake.

For the top decoration color the remaining icing darker pink and cut out large circle for pram, cut out ¼ . Cut two small circles representing the wheels. Cut small long piece and shape it into the handle shape. Place all shapes on top of the cake so you can see how much space remains around the cake. Color remaining of the icing and cut out letters to spell – It’s a girl with exclamation mark.

Place these on top and spray with silver food spray.

Use prepared royal icing to decorate small details such as dots on pram, wheel details, pram handle, lines on the top of pram and small happy birthday on letter G.

The work is done all is left is to enjoy the cake.
